SMALL BATCHES, FRESH BEANS, NO SHORTCUTS

Onyx Coffee Lab started with a simple idea — roast coffee carefully, source it honestly, and make great beans easy to buy online or taste in person.

We are based in Cluj and roast in small batches because that is how you get the best out of each lot. The roastery is where we experiment, cup, and decide what goes in every bag.

WHEN WE ARE NOT ROASTING WE ARE USUALLY CUPPING SOMETHING NEW FROM A NEW ORIGIN

Roasting coffee well means tasting a lot of coffee. We spend a good part of the week cupping samples, comparing notes, and deciding which lots make the cut.

There is always another origin to explore and another roast profile to test. That curiosity is what keeps the roastery interesting and the coffee improving.

What sets us apart is how much we care about each lot

The difference between good coffee and forgettable coffee usually comes down to freshness and attention. We roast small, cup everything, and only send beans we are happy to drink ourselves.

We work the way we would want a roastery to work — source transparently, roast carefully, ship promptly, and be honest about what is in the bag.

How We Work

The journey each bag of beans takes, from sourcing to your cup.

We look for green coffee from farms and regions we trust, focusing on quality and transparency rather than volume.

Each lot gets its own roast profile, developed through testing and cupping to bring out its best characteristics.

Every roasted batch is cupped and evaluated before it ships. If it does not taste right, it does not leave the roastery.

Beans are packed promptly after roasting and shipped fresh, with the roast date clearly marked on every bag.

We open the roastery doors for guided cuppings and brewing sessions, so you can taste and learn alongside us.
